Creamy Chipotle Chicken Pasta

Your whole familia is going to love this meal prep, and it truly is pretty quick and easy to make! 63 grams of protein, under 600 calories, and just enough spice to keep things interesting. Check out this creamy chipotle chicken pasta (inspired by Cheesecake Factory)
- ½ Bunch of asparagus spears
- 1 Small red pepper
- Fresh or minced garlic
- 1 cup (226g of nonfat cottage cheese)
- 14g of Parmesan cheese
- 5g of Knorr Parma Rosa Sauce Mix
- Chipotle peppers in adobo sauce
- 4 oz Chicken breast (can be precooked from the store)
- 2 oz any type of pasta
Step 1. Prep your chicken breast and cook it however you like, and preheat your oven or air fryer. We do it in the air fryer for 18 minutes at 400 degrees and it comes out nice and juicy! You can also use precooked chicken strips from the store. Go ahead and cook your chicken if you did not buy store bought strips.
Step 2: Get your pasta water boiling
Step 3: Preheat your non-stick pan to a medium high heat. Add a small amount of oil or spray if you want
Step 4: Cut up your veggies and add them along with your garlic to the heated pan
Step 5: Cook pasta
Step 6: Blend together your cottage cheese, parmesan cheese, parma rosa blend, and chipotle peppers until creamy
Step 6: Take off your noodles when cooked, then your chicken. Let chicken rest a few minutes before slicing into small chunks.
Step 7: Add all ingredients to your pan and heat the sauce with the noodles, veggies, and chicken
Step 8: Serve and enjoy! It can also be saved and reheated or enjoyed cold
